1. Stir fried pork with bamboo shoots
Ingredients: bamboo shoots, pork, soy sauce, dark soy sauce, salt, sugar, cooking wine, scallions, ginger, garlic.
Method:
 
Peel and slice bamboo shoots, slice pork thinly, cut scallions into sections, slice ginger, and chop garlic into small pieces.
Heat up the oil, add chopped scallions, ginger, and minced garlic, and stir fry until fragrant.
Add pork slices and stir fry until color changes. Season with light soy sauce, dark soy sauce, cooking wine, salt, and sugar.
Add bamboo shoots and stir fry evenly until fully cooked
 
2. Sour and spicy bamboo shoots
Ingredients: bamboo shoots, red pepper, green pepper, garlic, ginger, dried chili, Sichuan pepper, vinegar, soy sauce, salt, sugar.
Method:
 
Peel and slice bamboo shoots, shred red peppers, cut green peppers into sections, chop garlic into small pieces, slice ginger, and cut dried chili peppers into small pieces.
Heat up the oil, add Sichuan peppercorns and stir fry until fragrant, then remove.
Add minced garlic, sliced ginger, and dried chili to the pot and stir fry until fragrant.
Add shredded red and green peppers and stir fry evenly. Add bamboo shoots and stir fry until fully cooked.
Add vinegar, soy sauce, salt, and sugar for seasoning, stir fry well and serve one

3. Hot and sour soup with Bamboo Shoots
Ingredients: bamboo shoots, fungus, tofu skin, egg yolk, diced tomatoes, scallions, chili oil, white pepper powder, salt.
Method:
 
Bring water to a boil in a pot, then blanch the fungus in water and remove for later use.
Heat hot oil in another pot, add diced tomatoes and stir fry until cooked.
Add tofu skin and cook until cooked. Remove and set aside.
Bring water to a boil in a pot, blanch bamboo shoots and remove for later use.
Put the cooked ingredients into a bowl, add egg yolk and cook until it solidifies. Remove and set aside.
