Fresh bamboo shoots preservation method:
1. Sealing method
Take clean winter bamboo shoots and place them in jars or tanks, then cover them with two layers of plastic film and tie them tightly to prevent air from entering; Or take a non leaking plastic bag, pack the winter bamboo shoots, tie the bag tightly, and place it in a cool and ventilated place. Using this method to preserve winter bamboo shoots can keep them fresh for 20-30 days.
2. Saltwater immersion method
Place the whole winter bamboo shoot in a pickle jar (or pool) and soak it in concentrated salt water. It can be stored for about 2 months without changing the quality of the bamboo shoot meat or the color of the bamboo shoot shell. When consumed, it must be soaked in clean water to remove salt.
3. Sand storage method
Take a wooden bucket or cardboard box, lay 7-10 centimeters of wet river sand on the bottom, arrange the intact winter bamboo shoots with their tips facing up in the bucket or cardboard box, fill the gaps with river sand, and then cover them with a layer of 7-10 centimeters of river sand. After completely covering the tips of the winter bamboo shoots, move them to a cool and ventilated place, and store them fresh for 30-50 days without spoilage.
4. Steaming method
Remove the outer shell of the selected winter bamboo shoots and wash them thoroughly. Then, cut the large winter bamboo shoots in half and cook them in a steaming rack or water pot until they are 5% ripe. Take them out and spread them in a bamboo basket for ventilation. They can be kept fresh for 10-15 days. This method is suitable for damaged winter bamboo shoots or those consumed for a short period of time.
5. Cooking and Storage Method
Bury the winter bamboo shoots that have been dug up, including their shells, and simmer them over the fire until they become soft and firm when pinched by hand. After simmering, take it out and place it vertically in a cool and damp place. When eating, remove the outer shell, cut it into thin slices, and rinse off the bitterness with water. Using this method to preserve winter bamboo shoots can keep them fresh for 35-45 days.
