Stir fried beef with bamboo shoots
Ingredients: 500g bamboo shoots, 200g beef, 3 Sichuan peppercorns, appropriate amount of ginger, 3 cloves of garlic, 15ml cooking wine, 5ml soy sauce, 15ml oyster sauce, 2g starch, appropriate amount of oil.
Method:
1. Peel off the outer skin of the bamboo shoots, clean them thoroughly, and cut them into long sections diagonally with a knife. Then blanch the bamboo shoots in boiling water for 2 minutes, remove them and soak them in clean water for at least 1 day. During this period, change the water several times.
2. Wash and slice the beef, mix with a little cooking wine, soy sauce, and starch, marinate for a while, and chop the Sichuan pepper, garlic, and ginger into small pieces. There is no need to add oil to the wok. After heating it up, add bamboo shoots and stir fry over medium heat. After drying the water in the bamboo shoots, remove them.
3. Heat up the wok with oil, add minced ginger, garlic, and Sichuan peppercorns, stir fry until fragrant, add beef and stir fry until raw, add bamboo shoots and stir fry, add cooking wine, oyster sauce, and salt, stir fry evenly.
