Braised pork belly with Bamboo Shoots
 
Ingredients: 1 bamboo shoot, 1 pound of pork belly, Sichuan pepper, cinnamon, star anise, dark soy sauce, cooking wine, ginger slices, scallions, rock sugar, salt.
Method:
1. Wash the pork belly with skin and cut it into 2cm square pieces. Remove the shell from the bamboo shoots and cut them into rolling blocks. Blanch the bamboo shoots and pork belly separately, then remove and set aside.
2. Heat up the pot, add a little oil, and after the oil is hot, add rock sugar and stir fry until sugar colored. When bubbles appear and the rock sugar changes color, pour in the blanched pork belly and stir fry. Add chopped scallions, ginger slices, star anise, cinnamon, and Sichuan peppercorns and stir fry for a while. Then add cooking wine and dark soy sauce and continue stir frying for a while.
3. Put in bamboo shoots, add boiling water that covers the pork belly, boil over high heat until low heat and simmer for 1 hour, then add salt and simmer over high heat until the sauce is ready.
